Lately I’ve been loving avocado toast. If you follow me on Instagram you already know this. It’s such a yummy breakfast for me and since I’m completely in love with avocado it satisfies my cravings for the creamy green fruit.
I like to add something different to my avocado toast, I’m not a huge egg fan so I leave them out. But I love chorizo! I love the spicy flavors and how versatile it is.
I’ve been eating this for awhile now so I thought I would share my simple recipe with you all. The great thing about avocado toast is that you can customize it to your liking. Add whatever you want!
1. Prepare your avocado by mashing it with the lemon juice, salt, black pepper and adding in the sliced tomatoes. Put this in the refrigerator until you’re ready to assemble your toast.
2. On medium heat cook your chorizo until it is fully cooked and crumbled. Set aside in a bowl.
3. Drizzle olive oil on your sourdough bread and toast it. I put my bread under the broiler.
4. Now it’s time to assemble the toast. Put as much of the avocado mixture you want on your bread. Add the chorizo and crumble goat cheese on top.
This can make two slices of of avocado toast or one depending on how much of the ingredients you use.
